Season the ribeye with taco seasoning on both sides.
Heat olive oil in a frying pan over high heat.
Fry the meat for about 3 minutes on each side.
Remove the meat from the pan and let it rest before cutting into thin slices.
Cut cherry tomatoes, shallots, cilantro and green chili.
Squeeze over lime juice and toss lightly.
Warm the tortillas briefly.
Fill the tortillas with sour cream, cheddar, beef and vegetables.
Serve right away.
