Rub the baking potatoes with olive oil and flaky salt.
Wrap the potatoes in aluminum foil.
Bake the potatoes at 200 degrees for 60 to 90 minutes, depending on size.
Fry the bacon until crisp and drain it on paper towels.
Finely slice the spring onion.
Cut the potatoes lengthwise and press them lightly open.
Top the potatoes with sour cream, corn, bacon and spring onion.
Serve warm.
