White Asparagus with Butter Sauce

Instructions

Peel the white asparagus from just below the tip down toward the base.

Break off the lower woody part and trim the ends with a knife.

Bring salted water to a boil in a wide saucepan.

Add the asparagus and cook for 7 to 8 minutes, until tender but still holding its shape.

Lift the asparagus out of the water and place it on a platter.

Reduce the asparagus water until about 2 to 3 tbsp remain in the pan.

Add lemon juice and whisk in cold butter cubes little by little, until the sauce becomes glossy.

Serve the asparagus with the butter sauce, fresh herbs and freshly ground pepper.

Tips & tricks

Peel the asparagus thoroughly from just below the tip downward. Unpeeled fibers can make otherwise tender asparagus stringy, even when the cooking time is right.

Did you know?

White asparagus has a milder and more delicate flavor than green asparagus, but needs peeling because the skin is tough. The cooking water absorbs much of the asparagus flavor and can therefore be used in the butter sauce. When cold butter is whisked in gradually, the sauce becomes glossy and rich.
