Instructions
Cut the salmon into thin, even slices with a sharp knife.
Lay the salmon slices flat on a large platter or plates.
Keep the salmon chilled while you prepare the rest.
Finely chop the shallot.
Stir together soy sauce, rice vinegar, lemon juice and sugar until the sugar has dissolved.
Fold the shallot into the dressing and let it sit for a few minutes.
Brown the butter in a small saucepan over medium heat until it smells nutty and turns golden.
Remove the pan from the heat and let the butter settle slightly.
Spoon the dressing evenly over the salmon.
Drizzle the warm browned butter over just before serving.
Finish with a little lemon juice, flaked salt and grated lemon zest if desired.
Serve right away while the salmon is cold and the butter is warm.
