Let the cookies cool for a few minutes on the tray before moving them. This lets them set and makes them less likely to crack when lifted onto a wire rack.
Did you know?
Vanilla cookies get a classic chewy center and crisp edge when the dough contains both white and brown sugar. Brown sugar adds more moisture and caramel notes, while vanilla makes the flavor round and mild. When the cookies are removed before the center is fully firm, they continue setting on the tray.
