Instructions

Set the oven to 160 degrees top and bottom heat.

Line a baking tray with parchment paper.

Separate the eggs.

Add the egg whites to a clean bowl and add salt and baking powder.

Whip the egg whites into a stiff meringue that holds its shape well.

Stir the egg yolks together with cream cheese until smooth and lump free.

Gently fold the meringue into the egg yolk mixture in several additions with a spatula.

Shape small round breads on the parchment paper with a spoon.

Leave a little space between them.

Bake in the middle of the oven for about 22 minutes, until lightly golden and firm on the surface.

Cool on a wire rack before serving.

Tips & tricks

Fold in the meringue with gentle movements. If the air is knocked out, the cloud bread becomes flat and less airy.

Cloud bread gets its airy structure from stiff whipped egg whites gently folded into egg yolk and cream cheese. Since the bread contains no flour, the air in the meringue is the main support for the texture.
