Heat the oven to 175 degrees top and bottom heat.
Line a baking tray with parchment paper.
Stir room temperature butter soft in a bowl.
Add egg and vanilla extract, and stir until smooth.
Mix ground almonds, baking powder and salt in a separate bowl.
Fold the dry ingredients into the butter mixture in two additions.
Stir until you have a soft and shapeable dough.
Let the dough rest for about 5 minutes.
Divide the dough into even pieces and roll small balls.
Place the balls on the baking tray with some space between them.
Gently press them flat with your fingers or the back of a spoon.
Coarsely chop dark chocolate and press the pieces lightly into the cookies.
Bake in the middle of the oven for 10 to 12 minutes, until the edges are lightly golden and the center still seems a little soft.
Cool the cookies on the tray before moving them.
