Instructions
Heat the oven to 180 degrees fan.
Grease a 24 cm round cake tin and line the base with parchment paper if desired.
Peel the apples, remove the cores and cut the apples into thin slices.
Beat butter and sugar until light and airy in a large bowl.
Add the eggs one at a time and mix well between each egg.
Stir in vanilla sugar and yogurt until smooth.
Mix flour and baking powder in a separate bowl.
Gently fold the flour mixture into the batter until you have a thick and even cake batter.
Gently fold the apple slices into the batter.
Pour the batter into the cake tin and smooth the surface lightly.
Sprinkle sugar and ground cinnamon over the top.
Bake the cake in the middle of the oven for about 50 minutes. Check with a cake tester near the end.
Place foil loosely over the cake if it becomes too dark before it is fully baked.
Let the cake cool slightly in the tin before serving.
