Instructions

Coarsely grate the cucumber.

Sprinkle salt over the cucumber and let it sit for 10 minutes.

Squeeze as much liquid as possible from the cucumber.

Finely chop or grate the garlic.

Mix cucumber, Greek yogurt, garlic and freshly ground pepper in a bowl.

Season with more salt and pepper if needed.

Chill the tzatziki until serving.
