Pepper sauce with pickled green pepper gets a rounder and more aromatic heat than sauce made with only regular pepper. The pickled pepper adds mild heat, freshness and a little fruitiness. When stock and cream reduce together, the sauce becomes rich enough for steak, game and lamb.
