Whip the cream lightly until soft and airy, but not stiff.
Carefully fold the mayonnaise into the cream to make a smooth and creamy dressing.
Season the dressing with lemon juice and sugar.
Chill the dressing while preparing the rest.
Cut the pomegranate and remove the seeds.
Cut the grapes in half.
Peel the apples and cut them into cubes.
Toss the apples quickly with a little lemon juice to prevent browning.
Cut celery into thin slices.
Cut pineapple into smaller pieces.
Coarsely chop the walnuts.
Gently toss apples, celery, pineapple and grapes together in a large bowl.
Add the dressing and stir lightly so everything is evenly coated.
Fold in walnuts and pomegranate seeds at the end, keeping some back for garnish if desired.
Chill the Waldorf salad for at least 30 minutes before serving.
Top with extra pomegranate seeds and walnuts.
