Tips & tricks
Clean the chanterelles gently and avoid rinsing them for a long time. If the mushrooms are moist, let them dry briefly on paper towels before cooking so the toast does not become wet.
Did you know?
Chanterelles get more intense flavor when they are cooked dry first until their moisture evaporates. Only then can butter, shallot and garlic give the mushrooms a golden fried aroma instead of a boiled taste. On crisp sourdough toast, the contrast between soft buttery topping and crisp bread becomes especially clear.
