Instructions
Shred the chicken finely with your fingers or two forks.
Add cottage cheese, garlic, olive oil, cayenne pepper, lime juice and a pinch of salt to a small food processor or blender.
Blend into a firm and creamy dressing.
Mix the dressing with the shredded chicken.
Add curry, cumin and finely chopped cilantro.
Stir well.
Season with salt, pepper and more lime juice if needed.
Serve the chicken salad in sandwiches, baguettes, wraps or salad bowls.
