Heat a large frying pan over high heat and add a little of the olive oil.
Cook the reindeer meat quickly in batches so the meat sears instead of boiling.
Season with salt and freshly ground pepper near the end of cooking.
Set the meat aside and let it rest for a few minutes.
Rinse the romaine lettuce and dry it well.
Cut the cucumber into slices or sticks.
Halve the avocados, remove the stones and cut the flesh into slices.
Place lettuce and cucumber in a large bowl.
Whisk together Dijon mustard, lemon juice and the remaining olive oil into a smooth dressing.
Season the dressing with salt and pepper.
Arrange reindeer meat and avocado over the salad.
Pour over the dressing just before serving and toss gently.
