Salad with Pan Fried Salmon and Avocado

Instructions

Dry the salmon fillets well and season with salt and pepper.

Heat a frying pan over medium heat.

Fry the salmon in olive oil for 4 to 6 minutes on one side.

Turn carefully and cook for another 1 to 2 minutes, until the salmon is just cooked through.

Let the salmon rest for a few minutes before cutting it into large pieces.

Rinse and dry the romaine lettuce.

Cut the avocados in half, remove the stones and slice the flesh.

Add lettuce to a large bowl with sprouts and roughly chopped pecans.

Whisk Dijon mustard, lemon juice and olive oil into a smooth dressing.

Season the dressing with salt, pepper and chili flakes.

Arrange salmon and avocado over the salad.

Pour over the dressing just before serving and toss gently.
