Instructions
Crumble fresh yeast into a mixing bowl.
Melt the butter and mix it with milk.
Heat the mixture to about 37 degrees and pour it over the yeast.
Add egg and stir until the yeast has dissolved.
Add flour, sugar, salt and cardamom.
Knead the dough well for 10 to 15 minutes, until smooth and pulling away from the bowl.
Cover the bowl with plastic wrap or a cloth.
Let the dough rise until doubled in size, about 40 minutes.
Divide the dough into about 24 equal pieces and shape them into buns.
Place the buns on baking trays lined with parchment paper.
Let the buns rise again for 30 minutes.
Brush with egg or milk.
Bake at 220 degrees for 10 to 12 minutes, until golden.
Stir together icing sugar and water into a smooth glaze.
Dip the buns in the glaze while still warm and cool on a wire rack.

Tips & tricks
Do not add too much extra flour when shaping. A slightly soft dough gives juicier buns than a firm and dry dough.

Soft buns give the best result when the dough is kneaded long enough to become elastic and given enough time to rise. Cardamom gives classic Norwegian bun flavor, while the glaze on warm buns forms a sweet layer on top. Proper second rising makes the buns airier.
