Instructions

Remove leaves and stems from the tomatillos.

Cut the tomatillos into quarters.

Coarsely chop onion and green chili.

Peel the garlic and mash it lightly with a fork or the broad side of a knife.

Add tomatillos, onion, chili, garlic and salt to a saucepan.

Pour in water to cover about 1 cm above the ingredients.

Bring to a boil and cook for 12 to 15 minutes, until tomatillos and chili are completely tender.

Save about 1 dl of the cooking water.

Drain off the rest of the water.

Place the cooked ingredients in a blender or container for an immersion blender.

Blend into a smooth sauce.

Adjust with some of the cooking water until the salsa has a thin and pourable consistency.

Cool and season with more salt if needed.
