Salmon Salad with Quinoa and Cucumber Yogurt

Instructions

Rinse the quinoa well in cold water.

Cook the quinoa according to the package instructions and let it cool completely.

Pan fry or grill the salmon until cooked through but still juicy.

Coarsely grate the cucumber and squeeze out excess liquid.

Mix cucumber, yogurt, grated garlic, lemon juice, salt and pepper into a creamy dressing.

Break the salmon into large flakes.

Toss the quinoa with the cucumber yogurt.

Top the salad with salmon and finely chopped dill before serving.
