Instructions

Slice the salmon thinly with a sharp knife. Keep the slices cold while you prepare the rest.

Finely chop the shallot, capers, chives and dill. Mix them with caper brine, Dijon mustard, grated lemon zest, lemon juice and olive oil.

Season the dressing with salt and pepper.

Cut the cucumber into thin strips.

Arrange the salmon on a plate with cucumber and arugula. Pour the dressing over just before serving.
