Instructions

Season the meat well with salt and pepper on all sides.

Heat a frying pan over high heat.

Add sunflower oil and butter.

Brown the meat well on all sides.

Transfer the meat to a baking tray.

Roast in the oven at 120 degrees until the core temperature is about 60 degrees.

Calculate about 1 hour cooking time per kilo of meat, but use a meat thermometer for an accurate result.

Cool the roast beef completely in the refrigerator before slicing as thinly as possible.
