Cut the red onions into thin slices.
Melt butter in a wide saucepan over medium low heat.
Add red onion and cook for a few minutes until completely soft without taking on much color.
Sprinkle with sugar and add balsamic vinegar.
Let the onion simmer over low heat until the liquid has evaporated and the compote is soft and thick.
Stir regularly during cooking so the sugar does not burn.
Season with salt and pepper.
Transfer the red onion compote to clean jars or serve it warm.
