Instructions
Crumble fresh yeast into a mixing bowl.
Pour over lukewarm water and stir until the yeast has dissolved.
Add olive oil, flour, salt and sugar.
Knead the dough well by hand or with a stand mixer. The dough should be slightly sticky.
Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 30 to 40 minutes.
Blend butter, garlic, parsley and salt in a food processor to make garlic butter.
Roll the dough into a large square of about 50 x 50 cm.
Spread the whole dough with garlic butter.
Cut the dough into 5 equal pieces.
Stack the pieces on top of each other and cut into about 5 cm pieces.
Stack the pieces in a loaf pan.
Let the bread rise again for 30 minutes.
Bake at 180 degrees for about 40 minutes.
Cool on a wire rack.

Tips & tricks
Serve the bread warm and tear it apart at the table. If there are leftovers, warm them briefly in the oven to bring back more of the crisp edges.
