Instructions
Cut the plums into pieces and remove the stones.
Finely chop shallots and garlic.
Squeeze the lime juice.
Finely grate the ginger.
Lightly crush the fennel seeds in a mortar or with the side of a knife.
Add plums, shallots, garlic, sugar, brown sugar, apple cider vinegar, vinegar, lime juice, ginger, fennel seeds, cayenne pepper, chili flakes, cinnamon stick and water to a saucepan.
Bring to a boil and let the chutney simmer for about 30 minutes, until well thickened.
Stir regularly so the sugar does not burn.
Transfer the chutney to clean, warm jars with tight lids.
