Instructions
Crumble the yeast into a mixing bowl.
Heat the milk to about 37 degrees and stir it into the yeast until dissolved.
Add sugar, salt, vanilla sugar, egg and flour.
Knead until the dough starts to come together.
Add soft butter in cubes, little by little.
Knead for about 10 minutes, until the dough is smooth and elastic.
Cover and let the dough rise for 1 hour.
Blend pistachios, sugar and vanilla sugar into a smooth mixture in a food processor.
Stir in vanilla custard and cream into a thick spreadable cream.
Roll the dough into a rectangle.
Spread the pistachio filling over the dough.
Roll into a log and cut into slices.
Place the buns on baking trays lined with parchment paper.
Let them rise again for about 30 minutes.
Bake in the middle of the oven at 200 degrees for 12 to 15 minutes, until golden and cooked through.
Cool on a wire rack.
