Instructions
Bring vinegar, sugar and water to a boil in a saucepan.
Cut the red onion into thin slices.
Place red onion, whole black peppercorns and bay leaves in a clean preserving jar or heatproof bowl.
Pour the hot pickling brine over the onion.
Let the red onion sit for at least 30 minutes before serving.
Cool and store pickled red onion in the refrigerator.
