Pea Purée with Garlic

Instructions

Finely chop the garlic.

Melt some of the butter in a saucepan over medium heat.

Add garlic and cook gently for about 2 minutes without browning.

Add the peas and just cover with water.

Boil the peas for 2 to 3 minutes, until hot and tender.

Drain the water.

Add the rest of the butter.

Blend the peas to the desired consistency with an immersion blender.

Season with salt and pepper before serving.

Tips & tricks

Do not brown the garlic before adding the peas. Gently cooked garlic gives rounded flavor, while browned garlic can quickly taste bitter in a mild purée.
