Instructions
Cut the tomatoes into wedges and place them in an ovenproof dish.
Drizzle with 4 tablespoons olive oil and sprinkle with sugar.
Bake the tomatoes at 200 degrees for 20 to 25 minutes, until soft and lightly caramelized.
Cook the pasta in plenty of salted water until al dente.
Drain and let the pasta cool slightly.
Finely chop basil and garlic.
Stir together basil, garlic, 0.5 dl olive oil and lemon juice into a dressing.
Add pasta, baked tomatoes, arugula, mozzarella and pumpkin seeds to a salad bowl.
Pour over the dressing and toss gently.

Tips & tricks
Cool the pasta slightly before tossing it with arugula. Pasta that is too hot makes the salad wilt and can melt the mozzarella too much.
