Instructions

Let the butter become room temperature before you start.

Heat the oven to 190 degrees and line baking trays with parchment paper.

Beat butter, white sugar and brown sugar together until smooth and airy.

Add the eggs one at a time and mix well between each egg.

Process the hazelnuts finely in a food processor.

Grate only the outer orange zest from the oranges.

Mix flour, baking soda, baking powder, salt, vanilla sugar, finely ground hazelnuts and grated orange zest in a separate bowl.

Stir the dry ingredients into the butter mixture until you have an even cookie dough.

Shape the dough into balls and place them on baking trays with plenty of space.

Bake the cookies for 12 to 15 minutes, until the edges are set and the centers are still slightly soft.

Let the cookies cool on the tray for a few minutes before transferring to a wire rack.

Tips & tricks

Grate only the outer orange zest. The white pith underneath can give the dough a bitter taste, especially when the orange zest is used directly in the baking.

Orange zest contains aromatic oils that give baking fresh citrus flavor without adding extra liquid. Together with hazelnuts, the cookies get a warm, nutty and slightly more grown up taste. Finely ground hazelnuts also make the dough more aromatic and give a softer nut character.
