Open Faced Brie and Mushroom Toast

Instructions

Lightly fry the bread slices in a pan with olive oil until they get a little color. Set them aside.

Add the mushrooms to the pan and cook until the liquid has evaporated.

Add butter, finely chopped shallots and finely chopped garlic. Continue cooking until the mushrooms are golden.

Season the mushrooms with lemon juice, salt and pepper.

Place sliced brie on the bread and return the slices to the pan. Use low heat, cover with a lid and let the cheese melt.

Top the toasts with fried mushrooms and finely chopped chives before serving.

Tips & tricks

Cook the mushrooms until the liquid is gone before adding butter. This gives the mushrooms better browning and a more concentrated flavor, and the bread becomes less soggy when the toast is assembled.
