Instructions
Beat room temperature butter and sugar together until light and airy.
Add dark syrup, cream, ground pepper, ginger powder, ground anise and ground cardamom. Stir well until evenly mixed.
Sift in baking soda and flour.
Knead the dough until even and smooth.
Wrap the dough in plastic wrap and refrigerate overnight.
Heat the oven to 190 degrees and line baking trays with parchment paper.
Roll the dough into small balls and place them with some space between each one on the baking tray.
Bake the peppernuts in the middle of the oven for about 12 minutes, until lightly golden.
Cool the cookies on a wire rack before storing in a cookie tin.
