Instructions
Melt sugar, butter and dark syrup together in a saucepan over low heat.
Stir gently until the sugar has dissolved and the mixture is smooth.
Add ground pepper, cinnamon, ginger and cloves.
Stir well.
Remove the pan from the heat and let the mixture cool until lukewarm.
Stir in the eggs until smooth.
Sift flour and baking soda together.
Gradually mix the dry ingredients into the syrup mixture until you have a smooth dough.
Place the dough in a bowl, sprinkle with a little flour and cover with plastic wrap.
Chill the dough for a few hours, until firm enough to roll.
Roll the dough to about 3 mm thickness on a lightly floured surface.
Cut out gingerbread cookies in desired shapes.
Place the cookies on baking trays lined with parchment paper.
Bake in the middle of the oven at 175 degrees for about 10 minutes, until lightly golden.
Cool on a wire rack before decorating or serving.

Bake a test cookie first if the dough is rolled unevenly. This quickly shows whether the thickness and baking time give crisp cookies without making them too dark.
