Norwegian Christmas Bread with Raisins

Instructions

Melt the butter in a saucepan and add the milk. Warm the mixture until lukewarm.

Mix flour, sugar, dry yeast and ground cardamom in a baking bowl.

Add the lukewarm milk mixture and knead until the dough is smooth, elastic and pulls away from the bowl.

Cover the bowl with plastic wrap or a kitchen towel. Let the dough rise in a warm place for about 40 minutes, until doubled in size.

Turn the dough out onto the counter and divide it into two pieces. Scatter the raisins over the dough and gently knead them in.

Shape the pieces into large round Christmas loaves or place them in greased loaf tins. Cover and let rise again for 30 to 40 minutes.

Preheat the oven to 175 degrees. Lightly whisk the egg and brush the loaves.

Bake the loaves on the lower rack for 30 to 40 minutes, until baked through and golden. Cool on a wire rack before serving.

Tips & tricks

Soak the raisins in a little lukewarm water before kneading them in if they are dry. This makes them juicier and keeps them from drawing moisture from the dough during baking.
