Beat room temperature butter and sugar until light and airy.
Add egg yolk and light syrup.
Mix well until evenly combined.
Sift flour, cinnamon, vanilla sugar and baking soda together.
Gradually fold the dry ingredients into the butter mixture.
Gently knead the dough together until smooth and pliable.
Divide the dough into four equal parts.
Roll each piece into a log and place them on baking trays lined with parchment paper.
Press or roll the dough logs flat lengthwise.
Brush with beaten egg.
Sprinkle with pearl sugar and chopped almonds.
Bake high in the oven at 175 degrees for 12 to 14 minutes, until the logs are golden.
Cut the logs into about 2 cm wide strips while still warm.
Cool the brown sticks on a wire rack before serving or storing.
