Instructions

Mix the flour, dry yeast and salt in a large bowl the night before baking.

Add cold water and stir with a spoon until all the flour is moistened. The dough should be sticky.

Cover the bowl with plastic wrap or a lid, and let the dough rise on the counter for 8 to 12 hours.

Heat the oven to 230 degrees the next morning and line a baking tray with parchment paper.

Sprinkle a little flour on the counter and gently turn out the dough. Divide it into about 10 pieces with a knife or spatula, without kneading or shaping them too much.

Place the pieces carefully on the baking tray and bake in the middle of the oven for about 20 minutes, until the rolls are golden and crisp.

Cool the rolls on a wire rack before serving.

Tips & tricks

Place the dough somewhere a little cooler if it needs to rise longer than 12 hours. This lets the flavor develop more slowly and makes the dough easier to handle the next morning without becoming too loose.
