Add Dijon mustard, wholegrain mustard and sweet mustard.
Whisk until the mixture is smooth.
Add sunflower oil in a thin stream while whisking, until the sauce becomes glossy and rich.
Finely chop dill and stir it into the sauce.
Taste and adjust with a little more vinegar or mustard if needed.
Let the sauce chill for at least 10 minutes before serving, so the flavor can settle.
