Instructions
Cut half of the mushrooms into pieces and keep the rest whole or in larger pieces for topping.
Melt butter in a saucepan over medium heat.
Add finely chopped shallots and garlic, and cook until the onion is glossy.
Add the mushrooms that will be cooked in the soup and cook for a couple of minutes.
Pour in chicken stock and cream.
Bring to a boil and let the soup simmer for 15 minutes.
Mix cornstarch with a little cold water and whisk it into the soup.
Let the soup simmer until it has the desired consistency.
Season with lemon juice, salt and pepper.
Fry the remaining mushrooms in butter and season with salt and pepper.
Serve the soup with butter fried mushrooms and chives on top.
