Peel the mango and cut the flesh into small cubes. Cut the yellow tomatoes into small pieces.
Finely chop the shallot, red chili, cilantro and ginger. Remove the seeds from the chili if you want a milder mango salsa.
Mix the mango, tomato, shallot, chili, ginger and cilantro in a bowl. Add the olive oil and squeeze over the lime juice.
Gently toss everything together and season with salt and pepper. Serve the mango salsa right away, or let it sit for a few minutes so the flavors can settle.
