Mango and Avocado Salsa

Instructions

Peel the mango and cut the flesh into small cubes.

Cut the cucumber lengthwise, scrape out the soft center and cut the cucumber into small cubes.

Slice the spring onions thinly.

Finely chop cilantro.

Remove the stem and seeds from the chili, and cut the chili into small cubes. Keep some seeds if you want a hotter salsa.

Halve the avocados, remove the stones and cut the flesh into cubes.

Squeeze the lime juice into a bowl and mix with salt and freshly ground pepper.

Gently toss mango, cucumber, spring onion, chili, cilantro and avocado with the lime mixture.

Season with more lime, salt and pepper before serving.
