Instructions
Heat the oven to 160 degrees and line a large baking pan, about 30 x 40 cm, with parchment paper.
Beat butter and sugar until light and airy.
Add the egg yolks one at a time, mixing well between each one.
Mix flour and baking powder in a separate bowl.
Stir the flour mixture into the butter cream alternately with milk, until you have an even batter.
Spread the batter evenly in the pan.
Whip the egg whites until stiff in a clean bowl.
Add sugar little by little while continuing to whip, until the meringue is glossy and stiff.
Carefully spread the meringue over the cake batter and sprinkle with chopped almonds.
Bake the cake in the middle of the oven for 30 to 35 minutes, until golden and cooked through.
Cool the cake completely in the pan.
Whip cream and vanilla sugar until airy.
Gently fold the vanilla custard into the whipped cream.
Cut the cooled cake into two equal pieces.
Place one piece with the meringue side down, spread the vanilla filling over it and place the other piece on top with the meringue side up.
Chill the cake before serving.

Tips & tricks
Use a long, sharp knife when cutting and moving the cake. The meringue can crack easily, so lift the cake pieces with wide spatulas or parchment paper if needed.
