Add tipo 00 flour, salt, sugar, dry yeast, olive oil and water to a stand mixer.
Knead the dough for at least 10 minutes, until smooth.
Cover the bowl with plastic wrap or a clean kitchen towel.
Let the dough rise for about 30 minutes, until doubled in size.
Divide the dough into 3 to 4 pieces.
Shape the pieces into tight balls.
Place them on a tray with a little flour or oil in the bottom.
Cover and let them rise again for about 30 minutes.
Roll or press the dough into thin pizza bases and top as desired.
