Mix wheat flour, fine wholemeal spelt flour, salt, sugar and dry yeast in a large baking bowl.
Add lukewarm water and sunflower oil. Knead the dough in a stand mixer for 8 to 10 minutes, until smooth and pulling away from the bowl.
Cover the bowl with plastic wrap or a kitchen towel. Let the dough rise in a warm place for about 1 hour, until doubled in size.
Turn the dough out onto a lightly floured surface and divide it into two equal pieces. Shape them into loaves and place them in greased tins, or shape round loaves and place them on parchment paper.
Cover the loaves and let them rise again for 30 to 40 minutes.
Brush the loaves with a little water and bake in the middle of the oven at 220 degrees for 25 to 30 minutes, until golden and hollow sounding when tapped underneath.
Cool the loaves on a wire rack before serving.

Tips & tricks
Let the bread cool completely before slicing. If it is cut too early, steam can escape too quickly and make the loaf more compact, even if it looks fully baked on the outside.
