Instructions

Scrape the seeds from the vanilla bean.

Add vanilla seeds, vanilla bean, cream and whole milk to a saucepan.

Heat to the boiling point while stirring.

Remove the saucepan from the heat and let the mixture cool slightly.

Lightly whisk sugar and egg yolks together in a bowl.

Gradually pour the warm milk mixture into the egg yolks while stirring constantly.

Pour everything back into the saucepan.

Heat gently while stirring continuously until the custard sauce thickens. It must not boil.

Strain the sauce if you want a completely smooth texture.

Cool the vanilla sauce before serving, or serve it warm.

Tips & tricks

Stir constantly while the sauce heats, and remove it before it boils. This prevents the egg yolks from coagulating and making the sauce grainy.
