Instructions

Finely shred the cabbage and cut the apples into thin wedges.

Melt the butter in a large saucepan over medium heat. Add the cabbage and cook for a couple of minutes while stirring.

Add apples, caraway, salt, sugar, vinegar, freshly ground pepper and stock.

Stir well, cover with a lid and let the surkål simmer over low heat for 45 to 60 minutes. Stir occasionally and add a little more liquid if needed.

Season near the end with more vinegar or sugar if you want more acidity or sweetness.

Tips & tricks
