Homemade Aioli with Hand Blender

Instructions

Add egg yolks, garlic, Dijon mustard, salt and lemon juice to a tall hand blender cup or narrow container.

Carefully pour the sunflower oil over without stirring.

Place the hand blender all the way at the bottom of the container. Start blending and hold it still for about 10 seconds, until the aioli begins to thicken at the bottom.

Slowly lift the hand blender upward while continuing to blend, until all the oil is mixed in and the aioli is thick and smooth.

Season with more lemon juice, salt or garlic if needed.

Keep the aioli cold until serving.

Tips & tricks

If the aioli becomes very thick, stir in a few drops of cold water or a little more lemon juice. This lightens the texture without losing the garlic flavor or richness.

Aioli is an emulsion, where oil is bound with egg yolk into a thick sauce. A hand blender and narrow container make the process easier because the oil is gradually pulled into the sauce from below. Lemon and Dijon mustard add freshness and help the flavor become more balanced.
