Instructions
Add egg yolks, sunflower oil, Dijon mustard, cayenne pepper, lemon juice and fresh herbs to a tall narrow container.
Place the immersion blender all the way at the bottom of the container.
Blend on full power without lifting the blender for the first few seconds.
Slowly move the immersion blender upward as the mixture thickens.
Blend until the aioli is thick, smooth and creamy.
Season with salt, pepper and a little more lemon juice if needed.
