Cut the nectarines in half and remove the stones.
Grill the nectarines over high heat for 1 to 2 minutes on each side, until they have clear grill marks and are slightly tender.
Finely chop the shallot and garlic.
Stir together olive oil, honey, balsamic vinegar, shallot, garlic, lemon juice, grated lemon zest, basil and thyme into a vinaigrette. Season with salt and pepper.
Pour the vinaigrette over the grilled nectarines and top with fresh mint.

Tips & tricks
Use ripe but firm nectarines. Overripe fruit can fall apart on the grill, while very hard nectarines give less sweetness and aroma.
