Instructions
Cut about 2 cm off the bottom of the asparagus.
Peel the lower part if the stalks are thick.
Drizzle a little olive oil over the asparagus and season with salt and pepper.
Grill the asparagus over high heat for about 2 minutes on each side.
Cut the asparagus into large pieces.
Cut the tomatoes into pieces.
Mix olive oil, honey, balsamic vinegar, Dijon mustard, lemon juice and grated lemon zest into a vinaigrette.
Season with salt and pepper.
Gently toss asparagus, tomato and vinaigrette together before serving.
