Instructions

Finely slice cabbage, cucumber and spring onion.

Add spinach, basil, garlic, lemon juice, shallot, Parmesan and olive oil to a blender.

Blend into a smooth green dressing.

Season with salt and pepper.

Toss cabbage, cucumber and spring onion with the dressing.

Serve the salad right away.
