Cut the tomatoes into medium pieces. Peel the cucumber, cut it in half, scrape out the seeds and cut it into pieces.
Finely chop the red onion. Cut the olives in half and remove any stones.
Add tomato, cucumber, red onion and olives to a bowl. Add grated lemon zest, lemon juice, olive oil, mint and parsley.
Gently toss the salad together and season with salt and pepper.
Top with feta cheese just before serving.

Tips & tricks
Use room temperature tomatoes if you have time. They have more flavor than very cold tomatoes straight from the refrigerator and give the salad better sweetness, juiciness and aroma.
