Instructions

Let the butter become room temperature.

Add butter, chives, dill, tarragon and garlic to a blender.

Blend into a smooth green herb butter.

Split the langoustines lengthwise.

Place the langoustines cut side up on a baking tray lined with parchment paper.

Spread herb butter over each langoustine.

Gratinate in the oven at 250 degrees for about 5 minutes, until the butter melts and the langoustines are warm.

Grate over a little lemon zest and squeeze over lemon juice just before serving.

Tips & tricks

Watch closely while gratinating. Langoustines only need a few minutes, and too much time can make the meat dry.
